This is very easy to make and all you need is a simple roast chicken or some seared lamb chops and you have a quickly assembled meal. The water to couscous ratio varies with the brand of couscous, so follow your package directions for the correct amount.
Couscous With Feta, Dill, Pine Nuts And Scallions
Makes 4 side-course servings
- 2 tablespoons unsalted butter
- 1 1/4 cups water
- 1/2 teaspoon Diamond Crystal kosher salt
- 1 cup plain quick-cooking couscous
- 3 tablespoons chopped fresh dill
- 4 ounces (1/2-inch diced) feta cheese
- 3 tablespoons toasted pine nuts
- 3 scallions, green part only, thinly sliced
1. Add the butter, water and salt to a medium saucepan set over medium heat. Cook until the butter is melted, then increase the heat and bring to a boil. Remove from the heat and stir in the couscous. Cover the pan tightly and allow the couscous to steam for 5 minutes.
2. Fluff the couscous with a fork, then gently stir in the remaining ingredients. Serve warm or at room temperature.
